Delicious Berry Tarts filled with Blueberries, Blackberries and raspberries

Delicious and easy berry tarts

Ingredients

Crust:

1 cup oats

1 cup Coconut flour

2 cups chopped hazelnuts

4 tbsp honey

2 tbsp cream

16 chopped dates

Filling:

2 cups Raspberries

2 cups blueberries

2 cups blackberries

3 cups coconut milk

6 tbsp honey

2 tbsp starch

2 tsp agar agar

Instructions

Place oats and nuts in food processor and blend until finely ground

Add the rest of the ingredients and blend until a sticky dough forms

Place into tart tins or into 1 large tart pan and refrigerate

For Filling:

Blend all the berries and pour into a saucepan through a sieve.

Add coconut milk and honey and mix until combined.

Add the corn starch and agar agar and whisk until combined.

Bring the mixture to a brief boil and when it starts to thicken pour it in a bowl and let it cool until lukewarm. Stir time to time.

Pour the filling over the base and let cool in the fridge for about 4 hours to set.

You can top with berries, fruit or whatever you like.  I did mine with mellow ball dragon fruit, mint leaves and coconut flakes!
