Sweet & Spicy Tofu w/pineapple and cauliflower rice

Tasty grilled tofu & pineapple Light, healthy summer dinner

This meal is nice and light on a hot summer day. If you like Tofu this combo is a must. It is super tasty and packed with flavour an added bonus it is good for you! My husband did not know the rice was cauliflower rice. It is a pretty simple recipe so I hope you will give it a go. All you non cooks please do not let the amount of ingredients scare you off. You can do it!. If you do not have a grill it will be fine to cook on your stovetop in a pan.

Sweet & Spicy Tofu w/pineapple and cauliflower rice

A healthy summery dinner with Tofu, Pineapple and Cauliflower and packed with flavour.

Ingredients

1 package (350 grams) extra firm tofu

1/2 cup tomato paste
2 Tbsp honey
1 Tbsp low sodium soy sauce or tamari
1 tbsp hot sauce
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp minced ginger
1 package frozen cauliflower rice
1/2 pineapple cut into 1″ cubes
1/3 cup of each cilantro, basil and parsley fresh
2 green onions chopped
1 tbsp lime juice

Instructions

Place tofu on a plate and put another plate on top with a couple cans of beans or something with weight.  This will drain the liquid from the tofu.  About 15-20 mins

Make your sauce. Medium bowl whisk tomato paste, honey, tamari, hot sauce, garlic and onion powder, and ginger. Set aside.

Cut tofu and pineapple into approx 1″ cubes and put them on skewers. Spray with cooking spray.

Place your cauliflower rice in a bowl and add salt, pepper and heat for a minute. Then add the herbs, green onion and lime and mix.  Set aside until just before serving.

Heat grill to medium. Place skewers on your grill for about 2-3 mins then flip(you should see grill marks). Now add a thick coating of your sauce to the side that is up and grill for another 2-3mins.  Flip again and add another coating of your sauce. Flip again and add the remaining sauce and cook until it look caramelized.   Remove from grill.

Heat your rice for about 2 minutes.

To serve, spoon cauliflower rice onto a platter and place the skewers on top. Garnish with parsley, cilantro. If any leftover sauce spoon that on as well.
