Salmon Pockets

These little pockets were originated from Cactus Club restaurant. When they took the off the menu I was so sad because they are so amazing. So I took it to myself to recreate the recipe and I think they are pretty bang on. My husband thinks so and he is a pretty hard critic!.

You can eat them as an appie or for lunch or dinner. I like making extras for next day snack. They are pretty simple to make, just assembly takes a bit of time.

Salmon Pockets

These delicious little pockets are a great appetizer, lunch or dinner. Smoked salmon w/sushi rice, avocado, wasabi mayo.

Ingredients

12 tofu wrappers

12 slices smoked salmon

1 cup sushi rice

1 1/2 cup water

5 tbsp sushi seasoning

1 avocado

handful pea shoots

23 tbsps wasabi mayo

Instructions

Cook your rice in a rice cooker or on stove.

When rice is cooked put into a bowl and add your sushi seasoning and let cool.

To assemble:

smear a bit of the wasabi mayo into each pocket.

Add about 2 tbsp’s of rice, then smoked salmon, thin slice of avocado and pea shoots.  You can adjust the amount for each pocket when you see how full they are. You may add a bit more if not full.

Serve with more wasabi mayo or soya sauce and wasabi.
