One of my favourite dinners when we are in Hawaii is fresh Ono with Huli Huli sauce (a popular sauce on the islands) and of course coconut rice. Full of flavour, light and even healthy. If you are looking for a great tasty meal for family or friends this is up there on the list. Not even that hard to make so beginner cooks do not be afraid to give it a go!

Huli Huli Ono w/coconut rice
So good worth the effort and time
Ingredients
- 1 - 1 1/2 lbs White fish - I used Ono because in Hawaii but Halibut, Cod, Mahi Mahi all would be great
- -2 cups White Rice
- -1 14OZ can coconut milk
- -1 Tbsp sugar
- -1 1/2 cups water
- -2 tsps salt
- Optional 2 tbsp's toasted coconut for topping
- Huli Huli sauce:
- -1 cup pineapple juice
- -1 cup packed brown sugar
- -¾ cup ketchup
- -¾ cup reduced-sodium soy sauce
- -⅓ cup chicken broth
- -2-1/2 teaspoons minced fresh ginger
- -1-1/2 teaspoons minced garlic
Directions
- Step 1 For Sauce:
- Step 2 In a medium bowl, whisk together juice, brown sugar, ketchup, soy sauce, broth, ginger and garlic until combined.
- Step 3 Rice:
- Step 4 1. In a large pot over medium heat, combine rice, coconut milk, water, sugar, and salt. Bring to a boil, then reduce heat, and let simmer, covered, 18 to 20 minutes or until rice is tender.
- Step 5 2. Remove from heat and let sit 10 minutes, then fluff with a fork. Serve topped with coconut, if desired.
- Step 6 Fish:
- Step 7 1. Marinade is bowl or ziplock bag for about 15 mins.
- Step 8 2. Heat pan to a medium heat. Sear both sides for about 2-3 mins for medium rare. If you like cooked a bit more add about another 1-2 mins on each side.
- Step 9 3. Remove the fish and keep in warm place. Add the marinade to the pan and heat.
- Step 10 4. To serve add rice to plate, fish on top of the rice and drizzle with the Huli Huli sauce.
- Step 11 Option: Sear a slice of pineapple and serve on the side.
