Healthy Salmon Salad w/creamy dill dressing

Hello salmon lovers! Creamy, zesty and flavourful – this salmon salad recipe with, asparagus corn, potatoes and creamy dill dressing is simply the best! The salmon is juicy, easy and fast to make. Served over a bed of crunchy lettuce, topped with capers, fresh dill and lemon. This salad is so good for you – it’s super easy to make and you can have it ready in under 30 minutes!

Ingredients

  • 2 pound salmon fillet
  • Salt and ground black pepper
  • 1/2 lemon juiced
  • 2 tablespoons chopped fresh dill
  • 2 – 3 cups chopped mixed greens
  • 2 cooked potatoes cut into pieces
  • 1 cup canned corn
  • 1 bunch of asparagus(blanched) and cut into pieces
  • 1/2 cup creamy dill dressing
  • 12 tbsps capers

Instructions

  1. Season the salmon with a generous amount of salt and ground black pepper then add lemon juice on top. Preheat a large, non-stick frying pan and add a drizzle of olive oil. Fry the salmon covered for about 10 mins. The steam will cook the salmon keeping the juices in so it does not dry out.
  2. remove the salmon and break into bite size pieces. set aside
  3. For the salad, plate you greens on a plate, sprinkle corn around, add cut potatoes, asparagus and then you salmon. Drizzle with you dressing and top with capers and more fresh dill. Add more salt, pepper and lemon to your liking.

Notes

To keep your asparagus nice and green put directly into a bath of ice water directly out of the pot.
