A quick, easy breakfast that is also healthy. I like to make a 1/2 dozen to have for a few days. They can store the in the fridge for about 3 days in tupperware container or wrapped in plastic wrap. Adding things like smoked salmon, diced ham and cheese can also be great.

Ingredients
2 eggs
8 tbsp egg whites
1/2 red pepper
about 7 mini tomatoes
1/4 onion
2 red chard leaves finally chopped
salt and pepper to taste
Optional: Smoked Salmon, ham and Cheese
Instructions
Heat pan on low and add a bit of cooking spray.
Fry onion and pepper to soften
Whip your eggs then mix everything together.
Pour into sprayed muffin tin then place cut tomato in them.
Bake 350 about 18-20 mins or till puffed up.
This made 6 egg muffins.
