Crostini w/Cherry, Peaches & Goat Cheese

This fruity appetizer is delicious! Cherries, peaches and goat cheese are a wonderful combination. Because of the goat cheese you get some saltiness with the fruit. Then the added balsamic and basil, oh my. I have served this several times at parties and they always disappear quickly.

You must try it and love it too.

Crostini w/Cherry, Peaches & Goat Cheese

Ingredients

Scale
  • 1 small baquette
  • 1 1/2 cups cherries, washed, pitted and diced
  • 3 peaches, pitted and diced
  • 1 tbsp balsamic vinegar
  • 1 tsp lemon juice
  • 1/2 tsp sugar
  • 1/4 cup goat cheese
  • 2 tbsp chopped fresh basil

Instructions

Preheat over to 350

Slice baquette into thin pieces (about 1/4 inch)

brush bread with a thin layer of olive oil or cooking spray

Pit and cut the cherries and peaches and cut into bite size pieces

Toss fruit with lemon juice and sugar and mix, set aside

Toast your bread for about 10 mins, flipping once.  Bread should be slightly toasty

To assemble put about 1-2 tbsp on top of each piece of bread, sprinkle with goat cheese and then drizzle your balsamic vinegar on them.

Top with a couple piece of chopped basil

Notes

You can use fresh or frozen fruit.  Frozen cherries and peaches have no pits, nice time saver.

Can also use feta cheese or brie.  If using Brie I would put the slice of brie on the warm toast then top with your fruit mixture.
