Mulligatawny Soup

This is a rich flavourful indian soup. My Dad used to make this for us with his homemade baked bread, it always a bit hit. The combo of spices along with apple and chicken make for a great filling meal. Slight bit of curry ads such a great flavour and just a bit of warmth. You will love this one on a cold day!

Mulligatawny Soup

Mulligatawny is a rich flavour filled soup.  The curry powder adds a subtle bit of heat and the rice adds thickness.  This will definitely warm the belly!

  • Yield: 5 big bowls 1x

Ingredients

Scale

1/2 cup diced celery

1/2 cup diced carrots

1/2 cup diced green pepper

1/2 cup diced onion

1 medium apple diced

4 chicken breast cup into small pieces

1 cup canned diced tomatoes

2/3 cup uncooked rice

2 teaspoons cumin

3 teaspoons curry powder

1 teaspoon nutmeg

1/2 teaspoon tumeric

5 cups no salt chicken broth

salt and pepper to taste

Instructions

spray chicken with cooking spray and place in medium heat pan and cook till just about not pink

set aside

add onions and cook for about 3 mins

add celery, green pepper and carrots and cook for about 4-5 mins, till slightly soft

add your spices and stir in

add tomatoes and broth

add 2/3 cup uncooked rice

add your chicken

bring to slight boil then turn heat down to a simmer and cook for about 20-25 mins.

Serve into bowls and a drop of sour cream on top (optional)
