A light healthy lunch or dinner filled with simple ingredients. Bold flavours and a bit of spice is always a great thing. I used Spot prawns for this one but you can also use shrimp or chicken. Add this to your list of great salads!

Super flavourful and light Thai inspired shrimp salad

Ingredients
2 tbsp Rice Vinegar
2 Tbsp Mirin
2 Tbsp Sesame Oil
1 Tbsp honey
2 crushed garlic clove
1 inch minced ginger
1 1/2 cup finely chopped cabbage
2 carrots / spiraled or thinly sliced
1 small head of lettuce (your choice is fine)
1/2 Red onion diced
1/2 Red pepper sliced or diced
12 prawns (you could use baby shrimp as well)
1 cup cooked vermicelli rice noodles
1/4 cup cilantro
salt and pepper to taste
top with white and black sesame seeds
Instructions
Add first six ingredients to a blender or food processor of choice and mix.
Spiral or slice carrots
Dice up cabbage, red pepper, onion and cilantro and set aside
cook rice noodles as per package
peel shrimp and sprinkle with salt and pepper
cook in pan on medium heat until they turn pinkish
Now assemble your salad
Mix lettuce, cabbage together.
divide into 2 bowls
top with your noodle, red pepper, carrots and onion
Place cooked prawns on top and pour on the dressing
sprinkle handful of cilantro and enjoy!
Notes
Sliced avocado and cucumbers are another great addition
sprinkle red pepper flakes or your favourite hot sauce on top
You could used cooked Chicken or beef instead of Prawns
