This old fashioned tomato soup recipe has a new flair. Using fire roasted tomatoes adds a warm smokey flavour but still has the tanginess. I love it on a cold rainy day.

Good old fashioned tomato soup with an added smokey flavour. So good on a cold rainy day. Or any day for that matter 🙂

Ingredients
2 cans diced tomatoes with juice (19 oz each)
1 can fire roasted dice tomatoes w/ juice (19 oz)
6 fresh tomatoes
1 onion, diced
1/4 cup red wine (omit if you like)
4 garlic cloves, diced
1/4 cup tomato paste
3 tbsp brown sugar
3 cups water
2 tbsp olive oil
salt and pepper to taste
Instructions
In a large pot bring canned tomatoes with the juice, tomatoes, water, red wine, onion, garlic, tomato paste, sugar and a splash of olive oil to a boil.
Reduce the heat to low and simmer for about 45 minutes.
Remove from the heat and allow to slightly cool.
Use a hand blender or blender to puree soup until very smooth.
Season with salt and pepper.
Servie into bowls and drizzle with olive oil.
