Super Healthy Pancakes, Oats, Cottage cheese & eggs

I love making these pancakes for a good healthy breakfast. They have good for you ingredients and you make different variations of them. I like to make double and either keep in the fridge for a few days or freeze then pop in toaster to heat up. These are a great option. ENJOY!

Super Healthy Pancakes, Oats, Cottage cheese & eggs

  • Total Time: 15mins
  • Yield: 4 pancakes 1x

Ingredients

Scale

1 cup oats

1 cup cottage cheese

2 eggs

2tbsp pumpkin puree

Instructions

Mix all ingredients in a mixer until you get a nice smooth texture

Using a soup ladle, ladle into a low to medium heated pan.

Cook for about 3 mins.  If golden flip and cook another 3 mins.  Depending on your heat this could take a bit longer.

Serve with your favourite toppings.

Notes

A few variations for these pancakes:

you can use greek yoghurt instead of cottage cheese or do 1/2 and 1/2.

I used pumpkin puree here but have also made them with apple sauce instead and are delicious.

you can also add any fruit to the batter and cook.
