Hassleback Chicken Cordon Blue

A great baked chicken dinner recipe to use right away or freeze for a fast and healthy meal. This recipe I made 8 chicken breasts, cooked two and froze 6.

When you are ready to use them you simple take however many you want to cook out of the freezer and cook for about 40 minitues. Great for through the week or pre made dinner for friends and family.

Making this cordon blue hassleback style is easier than the usual way where you have to roll easy piece and get them to stay together. But it tastes just as good.

Chicken Cordon Blue

  1. Preheat the oven to 425 degrees F.
  2. Cut 4-5 slits into each of the chicken breasts,(on an angle) making sure not to cut all the way through. Leave roughly 1/4 inch unsliced. Brush the top of each chicken breast with 1 tablespoon of the mustard.
  3. Mix the breadcrumb, salt & pepper into a bowl then sprinkle the breadcrumb mixture evenly over the chicken, using your hands to press the mixture into the mustard. Place a quarter piece of cheese and piece of ham into each of the slits in each chicken breast. Transfer the stuffed chicken breasts to a baking sheet.
  4. Bake until the chicken is cooked through and the breadcrumbs are golden, 20 to 25 minutes. Serve warm with your favourite sides.
  5. Freezing instructions: Once the uncooked chicken breasts are assembled, wrap each piece in wax paper and then into freezer proof containers.
  6. When ready to eat, preheat the oven to 425 degrees F. Bake the chicken breasts from frozen until the chicken is cooked through and the breadcrumbs are golden, about 40 minutes. Serve as directed above.

Notes

For this recipe I made 8 chicken breasts, cooked to right away and froze the rest.  Easy to pull out through the week for a quick and great dinner.
